What do you need for it? Here are the ingredients:
- 4 pcs Arabic (Greek) breads;
- 600 g pork shoulder (or chicken thigh steak);
- 1 red onion;
- 50 ml olive oil;
- 1 tomato (pink);
- 2 garlic cloves;
- red pepper;
- pinch of nutmeg;
- a pinch of cinnamon;
- s alt;
- 2 tbsp. lemon juice;
- 1-2 tbsp. olive oil to braise the meat.
For the tzatziki sauce:
- 200 g Greek yogurt (or strained yogurt);
- 1 cucumber;
- 1 clove garlic;
- a pinch of dill;
- 1 tbsp. lemon juice;
Prepare a marinade mixture of lemon juice, olive oil, garlic. cinnamon, paprika, nutmeg, s alt and pepper.Cut the meat into very thin slices and put it in the marinade. You can leave it at room temperature for about an hour. Next, heat fat (olive) in a cast iron pan (or regular, but not Teflon) enough to cover the surface (1-2 tablespoons). Bake the pieces of meat until they get a nice brown and slightly crispy edges.
Then, on the same pan, heat the loaves very slightly. Cut the onion into half moons and the tomatoes into thin slices.
To prepare the tzatziki sauce, cut the cucumber into cubes, crush the garlic with a press and mince the fennel, add the yogurt (or yogurt), lemon juice and s alt to taste.
Spread the warm buns with the tzatziki sauce, then start layering the onions, tomatoes and finally the meat. Wrap and serve. Enjoy it!
