  • 4 cloves crushed garlic
  • 2 tsp. dry oregano
  • 1/2 cup olive oil
  • For salad:
  • 300 g orzo pasta or other short pasta
  • 14-16 cleaned shrimps
  • 1/2 cucumber
  • 1 small red onion
  • 10-12 cherry tomatoes
  • 200 g feta cheese
  • olives
  • parsley and mint for sprinkling

Preparation:

Start by preparing the dressing, which will also serve as the marinade for the shrimp. Combine all ingredients and mix well. Add some of the dressing to the shrimp and mix well. Put them in the fridge for 20 minutes to marinate.

During this time, cook the pasta according to the instructions on the package. When it is ready, strain it and put it in a suitable bowl. Add the dressing to it and mix. On a grill pan or in an oven (preheated to 200 degrees) in a tray on baking paper, roast the shrimp until pink (about 6-7 minutes).

Add the rest of the salad ingredients to the pasta, and finally the prepared shrimp. Finally, add a few drops of lemon juice, olive oil and s alt to taste.
