  • 5 eggs
  • 10 spoons of sugar
  • 200-250 ml liquid pastry cream
  • 1 packet of vanilla (you can do without it if you want to achieve a natural taste)


You need a stand mixer, pastry spatula and three DRY bowls. It is very important that they are dry, if there is even a drop of water, there will be no volume when whipped.

1. Separate the egg whites in one bowl, the yolks in the other, and pour the cream in the third.

2. Beat the cream on the highest setting of the mixer until it becomes very thick. (This takes me about 8-10 minutes).

3. You wash the stirrers of the mixer, dry them. Add 5 equal spoons of sugar to the egg whites and mix at maximum speed of the mixer until they become snow. The mixture should be so thick that when you turn the bowl, it does not fall.

4. You wash the stirrers, dry them. Add five equal spoons of sugar to the yolks. Beat at maximum speed until the sugar melts and they increase in volume. They will become almost white in color and quite thick.

5. Using the pastry spatula, pour the contents of all the bowls into one common bowl (the largest of the three) and mix with the spatula until you get a homogeneous mixture. It is important to stir slowly so as not to reduce the volume, that is why it is not mixed with a mixer, but with a spatula.

6. You are freezing.

7. You consume with a smile and pleasure, and maybe with strawberries! Bon appetit!
