- 1 and ¼ cups crushed graham crackers
- 4 tablespoons melted butter
- 1 tablespoon sugar
- Zest of 1 lemon
- 400 ml condensed milk
- ½ cup lemon juice
- 1 large egg
- 1 cup fresh blueberries
Heat the oven to 180 degrees. Line a rectangular baking tray with parchment paper and grease. Mix the crushed biscuits with the butter, sugar and half the lemon zest in a bowl. Mix well and press the mixture into the bottom of the pan.Bake in the preheated oven for 10 minutes. Remove and let cool on a wire rack for a minimum of 10 minutes.
In a bowl, mix the condensed milk, lemon juice, egg and remaining lemon zest. Finally, add the blueberries and gently mix with a wooden spoon or spatula. Pour the mixture into the lightly baked base. Return to the oven for another 15 to 20 minutes.
Remove from oven and let cool at room temperature for at least 1 hour. Then cover and refrigerate for a minimum of another hour. Cut into squares and serve.
