Products:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small zucchini, chopped
- ½ cup peas, cooked or frozen
- ½ pepper, chopped
- 150 g cherry tomatoes
- 1 small carrot, chopped
- 3 cloves garlic, pressed
- 1 teaspoon lemon juice
- 1 pinch Italian spice mix
- 1 tablespoon fresh basil
- ½ cup grated parmesan cheese
- 1 package pasta
- S alt and pepper to taste
Preparation:
Cook the pasta in s alted water. Drain and reserve the water. Put the olive oil and butter in a large deep pan. Heat over medium to high heat. Once it is well heated, add the vegetables and garlic. Sauté, stirring frequently, for about 5 minutes.
Add the lemon juice, basil and Italian seasoning. Before adding the pasta, add some of the water to the pan. Add the pasta. Before serving, add the parmesan. Season with s alt and pepper.
Note: Zucchini can be pre-grilled if desired.
