Products:
- 5 kg red peppers
- 4, 500 kg of red tomatoes
- 1, 500 kg of potatoes
- 1 kg carrots
- 600 g onion
- 200 g garlic
- 60 g hot peppers
- 1, 200 l oil
- 80 g s alt
Preparation:
The peppers are washed and roasted, cleaned of the stalks, scales and seeds and ground in a meat grinder. Tomatoes are washed, peeled and grated on a coarse grater. Boiled potatoes are peeled and ground with the machine. Carrots are cleaned and blanched for 3-4 minutes in boiling s alted water. Cool, grind and lightly fry. Onions are also cleaned, washed, ground and fried.Finely chop the garlic and parsley.
Put the grated tomatoes in a pan and thicken with continuous stirring until their volume becomes 1/3 of the original volume.
Add the peppers, potatoes, carrots, onions, 800 ml of oil, garlic, parsley, s alt and hot peppers.
Stir the mixture well, heat to boiling and remove from heat. Fill the hot lutenitsa in jars, seal with caps and sterilize for 40 min.
