The winter food I prepare is not much, but I have several "special" recipes for dishes that I try not to miss on our table. They are not very labor-intensive, they are tasty, and they can be used both as a side dish to grilled meats and also to be eaten as an independent dish.
One of them that I will share with you is “Cambi in Spicy Sauce”.
5 kg ripe red or yellow calamari
5 kg tomatoes
200 ml vinegar
200 ml oil
200 g sugar
50 g s alt
Bay leaf, allspice, black peppercorns, garlic cloves
The tomato sauce (made from tomatoes without seeds and skins) is boiled for about 15 minutes, after which vinegar, oil, s alt, sugar and spices are added. In the boiling sauce, let the cut and seeded calamari simmer for about 8-10 minutes.
The mixture is filled into jars while it is hot. The jars are closed and turned over.
After it cools down, the dish is ready to eat.
Suitable side dish for grilled meats, grills, fish.
