  • 1 kg zucchini, grated
  • s alt to taste
  • ΒΌ cup grated Parmesan cheese
  • 2 eggs
  • 2 spring onions, finely chopped
  • 3 garlic cloves, crushed
  • 4 basil leaves, chopped
  • 1 pinch of nutmeg
  • 1 pinch garlic s alt
  • pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon olive oil


Squeeze the grated zucchini in kitchen paper to drain the excess liquid they release. Then sprinkle them with s alt. Again leave on paper to drain for about 30 minutes as the s alt will cause liquid to re-release.

Mix the parmesan, eggs, onion, garlic, basil, nutmeg, garlic powder and black pepper in a bowl. Stir. Finally, add the courgettes. Stir once more.

Heat the butter and olive oil in a pan over medium heat. Using your hands, form a pancake-like shape from the zucchini mixture. Fry in hot oil. Fry until browned on each side.
