  • 1, 200 kg chicken breast
  • 3 mozzarella balls
  • 3 onions
  • 10 peppers
  • 500 g fresh mushrooms
  • 2 zucchini
  • 2 carrots
  • 1 eggplant
  • s alt, pepper
  • 100 ml oil
  • For the olive paste:
  • 300 g of olives are pureed with a few drops of oil and s alt to taste
  • For the pesto sauce:
  • Grind in a blender:
  • 1 bunch fresh basil
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup olive oil
  • 1/3 cup pine nuts
  • 3 garlic cloves
  • s alt, pepper


Season the chicken breasts with s alt and pepper and seal them on all sides in a frying pan with a little hot oil. They are smeared with the olive paste, placed on top of the mozzarella and fried.

During this time, the vegetables are cut and stewed well in a little fat. When they are soft enough, add the pesto and leave them on the stove for another minute or two.

To serve this fabulous dish, put a small amount of the vegetables on a plate, and on top of them one piece of the chicken breast. To finish, you can add a little more pesto.
