Products:
- 1 large onion
- 1 bunch spring onion
- 2 tablespoons olive oil
- s alt to taste
- For the dough:
- 500 g flour
- 1 tsp. s alt
- 25 g live yeast
- 1 bunch green onion, finely chopped
- 320 ml warm water
Preparation:
Cut the onion into strips and part of the spring onion. Fry them until golden in a pan with a little oil. Season with a little s alt and set aside to cool. In a large bowl, combine the flour with the remaining chopped green onion. In 80 ml of warm water, dissolve the yeast together with the s alt, then add it to the flour. Add 240 ml of water, mix everything and add the caramelized onions. Knead a soft and smooth dough.
Put it in a suitable bowl and cover it with a towel for about 60 minutes to rise. Then put it in a baking pan, round or oblong, which is well greased or you are sure that the dough will not stick. Cover again for about 30 minutes. Preheat the oven to 240 degrees with a small pot/tray of water placed in the base to create steam.
Steam for 15 minutes, then remove the dish with the water from the oven. Reduce to 230 degrees and bake for another 10-15 minutes. Before being cut, the bread must be well chilled.
