  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, pressed
  • 2 carrots, grated
  • 500g boneless chicken breast, diced
  • 4 cups chicken stock
  • 250 g semi-finished gnocchi
  • 300 g baby spinach
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 cups cooking cream
  • s alt and pepper to taste

Heat the olive oil in a deep saucepan over medium heat. Fry the onion, garlic and celery in it for 5 minutes. Stir in the chicken pieces and then add the broth. Bring to a boil.

Drop the gnocchi into the boiling soup and cook until they float or for 4-5 minutes. Then add the spinach. Meanwhile, dissolve the cornstarch in the water, being careful not to leave any lumps. Add to soup to thicken. Season with s alt and pepper.
