  • 1 and ½ cups dried pineapple chunks

  • 3 tablespoons orange peel

  • ½ cup orange juice
  • 2 cups butter
  • 4 cups powdered sugar
  • Eggs
  • 4 cups walnuts, chopped
  • 3 cups flour

Preparation:

Cut the dried fruit into large pieces. Soak them in orange juice overnight. Heat the oven to 140 degrees. Place a tray of water in the bottom of the oven for more moisture. Prepare a baking tray - greased and lined with baking paper.

In a large bowl, beat the butter with the powdered sugar. Separate the egg whites from the yolks. Beat the egg yolks and add them to the mixture with the powdered sugar. Add the dried fruit and walnuts. Stir with a wooden spoon. Sift the flour. Add it too and beat with a mixer.

In another bowl, beat the egg whites until foamy. Add them to the rest of the batter, mixing very carefully with a spoon. Pour the batter into the prepared pan, taking care not to overfill the pan. Bake for 2 hours or until golden brown. If desired, pour with white chocolate topping.
