Chocolate souffle with cinnamon


  • 75 g dark chocolate
  • 50 g butter
  • 40 g flour
  • 300 ml fresh milk + 1 tbsp
  • ½ tablespoon cinnamon
  • 5 eggs, yolks separated from whites
  • 2 tablespoons sugar


Heat the oven to 200 degrees. Grease souffle molds with very little melted butter and sprinkle them with a little flour. Sprinkle with some sugar too.

Put the chocolate in a pot in a water bath. Add one spoonful of milk to it. Melt it with stirring until it becomes a homogeneous liquid mixture. Set aside. In another pan or saucepan, melt the butter over low heat. add the flour little by little and stir until it is completely dissolved. Remove from heat.

Add 300 ml of milk to the flour mixture. Stir constantly until the mixture becomes creamy and has a paste consistency. Add the melted chocolate, cinnamon and 5 egg yolks. Mix very well. Set aside.

Beat the egg whites with the sugar, adding a little at a time. Beat until the egg whites form fluffy foam. Slowly and carefully add them to the chocolate mixture. Distribute the souffle in the molds and bake for 20 minutes. Serve immediately.
