Products:
- 6 chicken legs
- 3 skinless chicken breasts, cut in half
- 3 and ½ cups ice water
- 1 cup low-fat yogurt
- For the breading:
- 1 cup breadcrumbs
- 1 cup flour
- 1 tablespoon black pepper
- ½ tablespoon garlic powder
- ½ teaspoon basil
- ½ teaspoon oregano
- 1 pinch thyme
Preparation:
Oprah Winfrey's favorite recipe mimics breaded chicken thighs and chicken breasts, but the meat is actually roasted, making it he althier.
Heat the oven to 200 degrees. Grease a baking tray with vegetable oil of your choice. Place the chicken thighs and breasts in the ice water. Put the yogurt in another bowl. Set both bowls aside.
Mix all the ingredients for the so-called breading in a separate bowl and mix. Remove two pieces from the chicken, drain it from the water. Melt them in the yogurt. Then roll in breadcrumbs.
Do this with all the chicken thighs and breast pieces. Arrange them in the prepared greased baking pan. Roast for about 1 hour, turning the meat periodically.
