  • For swamps:
  • 5 eggs
  • 3/4 tsp oil
  • 1 tsp milk
  • 2 vanilla
  • 1 baking powder
  • 3/4 tsp sugar
  • 1 and 1/2 tsp flour
  • For the filling:
  • 1 jar of apricot, cherry or other jam of your choice.
  • For cover


Mix 1 egg, 4 egg yolks and sugar in a bowl. Add the oil and flour, followed by the baking powder. While stirring, add the vanilla.

Whisk the egg whites and add to the mixture with gentle stirring. Place everything in a greased and floured cake tin and bake for about 60 minutes at 180 degrees. Remove and let cool.

Cut the cooled sponge cake in half and soak each half with a syrup of 1 tsp water and 2 tbsp. a lie. from the jam. Place one half in a cake plate, spread the jam evenly and cover with the second half of the marshmallows.

From powdered sugar, water and dye, with vigorous stirring, make a couverture. When the mixture becomes smooth and homogeneous, pour the cake on top. Allow to set in refrigerator for about 1 hour.
